Preparation :

  1. Harvesting mature coconuts from coconut palm trees
  2. Husking the outer husk of the coconut, leaving the inner shell
  3. Cracking the hard coconut shell to open the white flesh inside, known as the coconut meat
  4. The brown skin or Testa or parings attached to the coconut meat is usually removed. This step is optional as the brown skin can be retained for added flavour and colour
  5. The white coconut meat is then grated into small uniform pieces manually or mechanically
  6. The grated coconut is spread out in thin layers and dried either by air drying, sun drying, or using commercial drying ovens.
  7. After the drying process, the desiccated coconut is cooled and packed in customised packs and sealed.
