NOTE : When using dried mushrooms, it's essential to rehydrate them by soaking in warm water before incorporating them into recipes. Additionally, the soaking liquid can be used to enhance the flavor of stocks, broths and sauces.

Preparation :

  1. Fresh mushrooms such as shiitake, oyster, porcini, cordyceps militaris and chanterelles are harvested
  2. The harvested mushrooms are carefully cleaned to remove any dirt, debris, or insects by brushing, wiping or washing the mushrooms
  3. After cleaning, the mushrooms are sliced into uniform pieces
  4. The sliced mushrooms are blanched in boiling water for a short period, typically a few minutes. This step helps to kill any remaining microorganisms, preserve the color and soften the mushrooms slightly
  5. The mushrooms are either air dried or sun dried and later cooled to room temperature
  6. The dried mushrooms go through quality control checks to ensure that they meet the desired standards in terms of appearance, texture, flavor and moisture content
  7. The dried mushrooms are packaged in airtight containers or vacuum-sealed bags to prevent moisture absorption and contamination
