Preparation :

  1. Fresh mangoes are harvested, peeled, pitted and then processed into a puree
  2. The mango puree is homogenized to ensure a consistent texture
  3. The puree is filtered to remove any coarse solids or impurities, resulting in a smoother and cleaner mixture
  4. The filtered mango puree is then fed into a spray dryer. In the spray drying chamber, hot air is introduced, and the mango puree is atomized into tiny droplets. These droplets are rapidly dried as they fall through the hot air
  5. Inside the drying chamber, the droplets of mango puree lose their moisture content and solidify into small, dry particles. The hot air evaporates the water, leaving behind the mango solids in powdered form at the bottom of the drying chamber
  6. After collection, the mango powder is cooled to reduce its temperature. This helps prevent clumping and ensures that the product remains in powder form
  7. The final mango powder is packaged in airtight containers to preserve its flavor and aroma
