Preparation :

  1. Fresh and clean curry leaves are harvested and rinsed under running water to get rid of dust and contaminants
  2. The cleaned leaves are then spread on a clean kitchen towel or paper towel to air-dry completely
  3. The dried curry leaves are roasted under low heat until they turn crispy
  4. The roasted leaves to allowed to cool down to room temperature
  5. Once the roasted leaves are cool, they are grinded to fine powder
  6. To obtain a uniform and fine texture, the curry leaves powder is sieved or sifted through a fine mesh to remove any larger particles or impurities.
